In the summer, we pick our organic 'Uova di Drago' aubergines, which are named after their dragon egg-like appearance. Next, the aubergines are peeled, sliced, and preserved in extra virgin olive oil. These aubergine slices have a meaty yet tender texture and are traditionally used in Italy during the winter. They can be enjoyed as a delicious antipasto on their own or as a topping for pizza or bruschetta. They also pair well with grilled meats or fish, and can even be added to pasta sauces to enhance their flavour.
