Garlic mayonnaise, or aioli, is a popular condiment in the Northwestern Mediterranean region. At Quintosapore, we have developed our recipe using a rare variant of garlic known as Aglione. This garlic has a milder flavour than regular garlic and is low in sulfur compounds, making it easily digestible. Aglione is primarily grown in the Valdichiana region, situated between Umbria and Tuscany, with a rich history dating back to Etruscan times. We use organic Aglione and balance it with olive oil, potato, lemon, and seasoning to create a delicious mayonnaise. You can use it as a dip for raw vegetables, onion rings, french fries, grilled salmon, steamed vegetables, baked potato, and sandwiches.
