VEGETARIAN GENOVESE PASTA SAUCE

A special and unique vegetarian version of the legendary Neapolitan Genovese pasta sauce (originally a meat ragu sauce dating back to the 15th century when an unidentified gastronome nicknamed "o' Genovese” started doing it in the taverns in Naples).

The sauce takes many hours of preparations (we harvest, hand peel and finely hand slice the onions) and almost two days to cook (we slow cook the onions in our kitchen lab, so they caramelize and become sweet and salty) and then we bottle the result for you.

Chef Nic’s serving suggestion: open the jar, warm the ready made sauce, add on pasta or gnocchi and grate some pecorino cheese on top!
