GREEN TOMATOES IN EXTRA VIRGIN OLIVE OIL

This is a specialty you won't find very often, with the recipe directly from Grandma Giuggioli, who made sure no tomatoes were left uncooked, even when, at the end of the season, only unripe green ones were left on the plants. 

We harvest the organic green tomatoes from the Orto at the end of October, slice them by hand, brine and store them 'sott'olio' in our extra virgin olive oil.

Green tomato, extra virgin olive oil, white wine vinegar, aglione garlic from Valdichiana, peperoncino essiccato, sale, timo essiccato.
